APPELLATION: Charmes-Chambertin AOC
VINEYARDS: Estate-owned vines, farmed biodynamically, from two parcels
acquired in 2006. Located in the “the real” Charmes, at the northern edge of
the vineyard, these plots have rare “pinot fin” vines propagated via massal
selection.
AGE OF VINES: 60-75 years
WINEMAKING: Hand-harvested. Sorted assiduously in the fields and cellar.
Fermented on indigenous yeasts in open-top oak vats and aged in 350L
French oak barrels. Unfined and unfiltered.
TASTING IMPRESSIONS: Aromas of black cherry, purple flowers, baking
spices. Concentrated, layered, suave.
PAIRING SUGGESTIONS: Grilled lamb sausages; roasted chicken with herbs;
air-dried saucisson with black pepper.
