Leaning into the more umami side of the flavor spectrum this wine leans towards a fino sherry. It is aged in chestnut barrels and develops a flor over the surface of the wine just like the finos do.
It can age virtually forever and unlike finos can go several weeks after opening.
Floral top notes with apple, toasted almond and ginger.
A great introduction to wines that are not primary fruit driven.
Pair with cheese plates, nuts and dried fruit, Roasted foul especially chicken, quail, and squab.
