• Vinification: 100% de-stemmed, temperature-controlled maceration in tanks for 10 days (daily punch-downs and pump-overs), indigenous yeast and malolactic fermentation in 228L oak barrels. Aged for 12-18 months on fine lees in barrel (1/4 new).

The parcel borders the Chassagne-Montrachet village appellation and the Clos Charreau of the Morgeot 1^er Cru. This vineyard is planted at a density of 10,000 vines per hectare and vines are pruned into Cordon de Royat.

Santenay is the southernmost village in the Côte de Beaune. Mostly red wines are produced here, although some attempts at making white wine have been made. The appellation's most prestigious 1^er Crus (including Les Gravières, La Comme and Clos de Tavannes) are located east of the village, next to Chassagne-Montrachet. The latter was named for its former owner, the Saulx de Tavannes family.

Only 150 cases are made each year.
